Healthy Wraps Bento


I saw chia wraps at the Supermarket and thought it would be perfect for the boys' lunches. They love their wraps. I prepared shredded chicken, shredded carrots, lettuce, ham, cheese, BBQ sauce and mayo filling.

Details are below :



For my youngest son, I prepared :
1. Chicken chia wraps
2. Corn on the cob
3. Tamagoyaki (egg rolled)
4. Cheese sticks
5. Yogurt for recess



My eldest son had similar lunch to his little brother, but he had rockmelon cuts for recess instead.

Wrap and Onigiri Bento


The boys had quite different lunches for today. My eldest son loves to eat rice so he had the onigiri bento lunch, while the youngest one chose to have wrap for his lunch. 
Although the boys don't really like tofu, I tried to incorporate tofu into the tofu and sausage roulade, and they don't mind at all!
Here I shared you the recipe :

Tofu and sausage Roulade

Ingredients :
300 gr white tofu
1 egg
100 gr prawn, minced
1 pcs carrot, grated
1 pcs spring onion, sliced
1/2 tsp chicken stock powder
1 tsp caster sugar
1/4 tsp pepper 
salt per taste
frankfurt sausage as needed

For frying :
1 egg, whisked 
Vegetable/ Canola oil as needed

Method :
1. Blend tofu until smooth, then mix with the other ingredients except the sausages. 
2. Take a little mixture and fry it. Then taste it. You can adjust the flavour as necessary.
3. Assemble the roulade using cling wrap, flatten the mixture as needed, then put the sausage on top, then roll the cling wrap and tighten both side.
4. Steam the roulade for around 20 minutes until cooked.
5. Set aside and let them cool in the fridge for a few hours.
6. Cut the roulade around 2 cm thick, dip in the egg mixture and fry until cooked.
7. Serve the roulade with tomato ketchup or sweet chili sauce



For my youngest son, I prepared :
1. Chicken wrap (with lettuce, grated carrot, roast chicken fillet, BBQ sauce, and cheese filling)
2. Fish cakes and tomato ketchup
3. Corn on the cob
4. Carrot sticks
5. Apple cuts for recess



And for my eldest son, I prepared :
1. Onigiri (decorated with nori and panda sticks)
2. Prawn tempura
3. Tofu and sausage roulades with tomato ketchup
4. Corn on the cob
5. Lettuce and carrot salad
6. Apple cuts for recess

Cute Chicks Bento


The boys love their wraps. This time, I filled the wraps with lettuce, shredded carrots, mayo, shredded roast chicken, cheese and ham. For a bit of fun, I created cute chicks for their lunches. I put additional carrots, black sesame seeds, and a tiny dips of tomato ketchup on the top of the cracking "egg shells" and they looked so adorable :)



For my youngest son, I prepared :
1. Chicken wrap
2. Cute chick
3. Milk jelly with nata de coco
4. Kiwi fruit for recess



The eldest brother had the same lunch as his little brother, but he had rockmelon cuts instead for recess.

Stamped Wrap Bento


My kids love wraps. This time I presented the wraps in more attractive style, used nori and sliced cheese as stamps and decorated them with eggsheet. Firstly, I cut the nori with corrugated scissor, then cut the sliced cheese with corrugated knife. Make them slightly smaller than the nori. Then I cut the eggsheet with the help of bento cutters (pictures & link below). That's it!

Chicken Nuggets Wraps


My sons love wraps so much. But this time, I ran out of lettuce in my fridge :( Since my youngest son does not really like broccoli on its own. I cut it small, then put it inside the wrap to add some green in his diet. And he didn't mind at all to eat broccoli in the wrap. Kids' are funny, huh ?

For the chicken nuggets recipe, I adapted from Popcorn chicken recipe from Better Home and Gardens with a little bit of twist to my liking. 

Chicken Nuggets Recipe

Ingredients
600g chicken breast fillets
1 cup plain flour
2 Tbsp cajun seasoning
1 Tbsp onion powder
1 Tbsp icing sugar
Salt and freshly ground black pepper, to season
4 eggwhites
125ml milk
2 cup breadcrumbs
1 cup shredded cheese
Vegetable oil, for deep-frying

Method
1. Using a meat mallet, pound chicken to 1cm thick. Cut into 2cm squares. Combine flour, seasoning, onion powder and sugar in a bowl. Season well. Put eggwhites and milk in a separate bowl and mix to combine. Put breadcrumbs & shredded cheese in a third bowl.

2. Toss 1 chicken piece in flour mixture, shaking off excess. Dip in eggwhite mixture, then coat with breadcrumbs. Repeat eggwhite and breadcrumb stages to create a thick double crumb. Repeat double-crumbing with remaining chicken pieces.


3. Pour oil into a large heavy-based saucepan to 3cm deep and heat to 180°C on a cook’s thermometer. Cook chicken, in batches, for 3 minutes or until golden. Drain on paper towel.

4. Datemaki (sweet rolled omelette)
5. Homemade fried fish ball
6. Yogurt for recess



For my eldest son, I prepared :
1. Chicken nuggets wraps (wraps, nuggets, bbq sauce, grated carrot, cheese and ham)
2. Corn on the cob
3. Carrot sticks and broccoli
4. Datemaki (sweet rolled omelette)
5. Homemade fried fish ball
6. Green seedless grapes for recess

Christmas Chicken Wraps


Today the kids are having chicken wraps for their lunches. I put  grilled chicken, lettuce, roma tomato, ham, cheese, BBQ sauce, and sour cream for the filling.

This time, I would like to share the apricot balls recipe. It's a healthier version of treats and tastes so good.

APRICOT BALLS
Ingredients :
200 gr dried apricots
1/2 cup oats
1 teaspoon honey
Desiccated coconut as needed

Method :
Blitz all together in food processor
Roll into balls, then roll into the desiccated coconut until well covered.
Keep them refrigerated .



For my eldest son, I prepared :

2. Apricot balls
3. Milk jelly with nata de coco
4. Kiwi fruit for recess


For my youngest son, I prepared :
1. Chicken wrap
2. Red seedless grapes
3. Milk jelly with nata de coco
4. Kiwi fruit for recess

Mexican Chicken Wrap bento


The boys love their chicken wraps. This time for more variety, I made ala Mexican style, with guacamole in it. (recipe as below).


Mexican Chicken Wrap 

For chicken
2 Chicken tigh/breast, cut into big chunky pieces then marinade them with soy sauce and lemon for 10 minutes. Before frying, dip in corn flour until covered all part of the chicken, then deep fried the chicken pieces until turn into brown.

For guacamole
2 avocados, diced
½ small red onion, finely diced
1 lime, juice only
A large handful of coriander, roughly chopped
½ cup cherry or grape tomatoes, finely diced
Sea salt, to season

How to make it:
Place all ingredients in a large mixing bowl and mash to combine well. Add more lime juice or salt if you think it needs it.

Tip:
Guacamole will keep in the fridge in a sealed container for about 2 days.

Inside the wrap : chicken, bbq sauce, grated carrot, guacamole, and cheese. Then wrap them with aluminium foil. It makes easier for the kids to hold.

Flowery Chicken Wraps Bento


Another variation of chicken wrap. I just marinated the chicken with soy sauce and lemon, mixed with corn flour and fried until turned into brown. Put together with lettuce, shredded carrot and cucumber, BBQ sauce and cheese for filling.

Details as below :



For my youngest son, I prepared :
1. Chicken wraps with ham & carrot "flower" on top
2. Corn on the cob
3. Ham "flower"
4. Siomay with tomato ketchup (recipe in here) - this time I add celery in it.
5. Lettuce
6. Kiwi fruit for recess

Easter Bunny Wraps


My last Easter-themed bento this year. I prepared "Easter Bunny" wraps (mini flour tortillas with filling consists of roast chicken, grated carrot, broccoli, BBQ sauce, ham and cheese). And then I sealed it with "bunny stamps" that made of nori, cheese, carrot, beetroot, and black sesame seed).

For my youngest son, I prepared :
1. "Easter Bunny" wrap

3. Hard boiled egg with salt and pepper
4. Banana for recess

Christmas Wrap


To make a suitable theme for Christmas, I decorated the chicken wrap with red napkin and wrapped it like Christmas present. Details as below :



For my eldest son, in the red box I prepared chicken wrap (wrap, chicken, lettuce, red capsicum, ham, cheese, BBQ sauce, and sour cream). And in the blue box I prepared :
1. "Santa" shaped jelly
2. Broccoli and cheese
3. Baby carrot and the leaf for decoration
4. Apple "checker"



For my little one, I prepared :
1. Chicken wrap (wrap, chicken, lettuce, red capsicum, ham, cheese, BBQ sauce, and sour cream)

Another Chicken Wraps


One of the kids' favorite for lunch is chicken wrap. I just marinaded the chicken with soy sauce and lemon, mixed it with corn flour and fried it until turned brown. Put together with lettuce, shredded carrot and cucumber, BBQ sauce and cheese for filling.

2. Two halves of hard boiled egg, sprinkled with black sesame seed
3. Broccoli and "flower" carrot
4. Sultanas



And for my little one, I prepared :
1. Chicken wrap
2. Carrot sticks, carrot "flower" and hard boiled egg
3. Lettuce and crab sticks
4. Watermelon cuts

Roast Pork Wrap



We had pork roast leftover, so I decided to make wrap for the kids' lunch boxes. The wrap contains of roast pork, wrap, grated carrot, lettuce, avocado, corn & tomato salsa with coriander, cheese and BBQ sauce.

For my little one, I prepared :
1. Roast pork wrap
2. Ham "flower"
3. Kiwi fruit
4. Lettuce
5. Strawberry yogurt



For my eldest one, I prepared :
1. Roast pork wrap
2. Two halves of hard boiled egg
3. "Hungry caterpillar" sausage
4. Broccoli, lettuce, and carrot sticks
5. LCM Yogurt split stick
6. Segmented orange for recess

Prawn Fajitas




It's been so long since I wanted to try Mexican food. I think this one is suitable for lunch box as well and the flavour is so fresh and yummy. The kids love it!. The Mexican flavours of lime, garlic, and coriander infuse these tasty tortilla wraps, served with creamy guacamole that is easy to make too....you should try it!

Here is the recipe :

PRAWN FAJITAS

Ingredients
2 tbsp olive oil
1 red capsicum, thinly sliced
1 large brown onion, thinly sliced
2 garlic cloves, crushed
1 tsp fennel seeds
1 tsp smoked paprika
1.2kg large green king prawns, peeled, deveined
12 burrito tortillas
½ cup light sour cream
1 large avocado
1 medium tomato
1 cup coriander leaves, chopped
1 medium red onion
1 lime

Method
Heat half of oil in a large frying pan on medium heat. Cook capsicum and onion, stirring occasionally, for 6-8 mins, until softened and starting to brown. Add garlic and cook for 30 secs, until fragrant. Transfer to a serving bowl. Cover with foil to keep warm.

Heat remaining oil in same pan on medium heat. Add fennel seeds and paprika and cook for 30 seconds, until fragrant. Add prawns and cook, stirring occasionally for 3-4 mins, until just cooked through. Transfer to a serving bowl.

To make guacamole :
Roughly mash the avocado in a bowl, and add 1 finely chopped tomato, 1 finely chopped red onion, chopped coriander, sour cream and juice of 1 lime. Mix and season it.

Meanwhile, heat tortillas according to packet directions.

Serve prawns, capsicum and tortillas with guacamole.

PS : There’s no need to clean the pan after cooking the capsicum, as it will impart a lovely flavour to the prawns.
