<span style="font-family: "verdana" , sans-serif;">After two weeks holiday, the boys are ready for school again. For their lunches, I prepared their favourite : S<span style="font-family: "verdana" , sans-serif;">teak and Mushroom Pies. We used to buy them before, but because my kids love them so much, I tried to make them myself and actually it is not that hard. Here I share you my recipe :
<span style="font-family: "verdana" , sans-serif;">

<span style="color: blue; font-family: "verdana" , sans-serif; font-size: large;">Steak and Mushroom Pies
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">Ingredients :
<span style="font-family: "verdana" , sans-serif;">- 675g braised steak, cut into small pieces
<span style="font-family: "verdana" , sans-serif;">- 225g button mushrooms, halved
<span style="font-family: "verdana" , sans-serif;">- 200g store bought puff pastry
<span style="font-family: "verdana" , sans-serif;">- 600ml beef stock
<span style="font-family: "verdana" , sans-serif;">- 1 onion, finely chopped
<span style="font-family: "verdana" , sans-serif;">- 1 tbs cooking oil
<span style="font-family: "verdana" , sans-serif;">- 25g of plain flour
<span style="font-family: "verdana" , sans-serif;">- 1 tbsp of Worcestershire sauce
<span style="font-family: "verdana" , sans-serif;">- salt and pepper
<span style="font-family: "verdana" , sans-serif;">- 1 tbs mushroom sauce
<span style="font-family: "verdana" , sans-serif;">- egg or milk to glaze
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">Method :
<span style="font-family: "verdana" , sans-serif;">1.Heat the cooking oil in a large frying pan.
<span style="font-family: "verdana" , sans-serif;">2.In the meantime, trim the fat from the meat and then toss in the flour seasoned with salt and pepper.
<span style="font-family: "verdana" , sans-serif;">3.Fry the meat in the fat until browned and then add the onion and mushrooms.
<span style="font-family: "verdana" , sans-serif;">4.Sprinkle the seasoned flour into the pan and cook until golden brown.
<span style="font-family: "verdana" , sans-serif;">5.Add the Worcestershire sauce, mushroom sauce and add more seasoning.
<span style="font-family: "verdana" , sans-serif;">6.Pour in enough stock to cover the beef and leave to simmer for 45 minutes.
<span style="font-family: "verdana" , sans-serif;">7.Preheat the oven to a temperature of 150°C.
<span style="font-family: "verdana" , sans-serif;">8.Roll out a single puff pastry on a flat surface. Use a large cookie cutter or any sort of circular lid to cut out a 4-inch circle of dough. Press each dough circle into the bottom of a muffin tin so that a tiny rim of dough remains sticking out the top. Repeat with remaining dough to fill all 12 muffin cups.
<span style="font-family: "verdana" , sans-serif;">9.Fill each cup with about 1/4 cup pie filling, or until the filling nearly fills the cups.
<span style="font-family: "verdana" , sans-serif;">10.Cut out a circle of dough just large enough to cover the top of the crust. Use your fingers to gently press the top crust to the bottom crust until they stick together and no gaps remain. (you can use fork to stick them together).
<span style="font-family: "verdana" , sans-serif;">11.Use a pastry brush to brush the tops of each pie with the whisked egg. Then bake for 25-30 minutes, or until the crust is lightly golden and the filling begins to bubble.
12. Remove and let cool for at least 15 minutes. Then very carefully use a knife to loosen the edges of each pie and gently lift each pie out. Serve immediately or cover and refrigerate.
<span style="font-family: "verdana" , sans-serif;">I love to put variety food in my kids' lunch boxes. This time, these are their favourites : sausage rolls, siomay and chicken ragout rissoles. Perfect snacks for little fingers.
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">Here I share the Chicken Ragout Rissoles recipe :
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">Chicken Ragout Rissoles
<span style="font-family: "verdana" , sans-serif;">adapted from Indochine Kitchen
<span style="font-family: "verdana" , sans-serif;">30 g celery, boiled and cubed
<span style="font-family: "verdana" , sans-serif;">1/2 cup oil
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">For skin wrapper
<span style="font-family: "verdana" , sans-serif;">1 egg
<span style="font-family: "verdana" , sans-serif;">50 ml milk
<span style="font-family: "verdana" , sans-serif;">1/2 tsp salt
<span style="font-family: "verdana" , sans-serif;">150 g water
<span style="font-family: "verdana" , sans-serif;">1 tbsp butter, melted
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">For crumbing
<span style="font-family: "verdana" , sans-serif;">4 egg whites
<span style="font-family: "verdana" , sans-serif;">400 g bread crumbs
<span style="font-family: "verdana" , sans-serif;">Oil for deep-frying
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">directions:
<span style="font-family: "verdana" , sans-serif;">For filling
<span style="font-family: "verdana" , sans-serif;">Heat oil over medium heat. Stir-fry onion until translucent, about 3 minutes.
<span style="font-family: "verdana" , sans-serif;">Add chicken pieces, cook for about 3 more minutes.
<span style="font-family: "verdana" , sans-serif;">Combine carrot, corn kernel, celery and peas into the wok. Continue cooking until all ingredients are well distributed, about 2 minutes.
<span style="font-family: "verdana" , sans-serif;">Season with nutmeg, pepper and salt.
<span style="font-family: "verdana" , sans-serif;">Add flour and stir continuously for 5 minutes.
<span style="font-family: "verdana" , sans-serif;">Pour milk and chicken stock into the wok. Let simmer for 5 minutes, till the mixture thickens, stirring a couple of times to ensure even cooking.
<span style="font-family: "verdana" , sans-serif;">Turn off heat and let cool.
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">For wrapper
<span style="font-family: "verdana" , sans-serif;">Combine flour, salt, water milk, butter and egg yolk in a bowl.
<span style="font-family: "verdana" , sans-serif;">Whisk mixture to a thin batter.
<span style="font-family: "verdana" , sans-serif;">Pour 1/4 cup of batter into a lightly oiled and preheated non-stick pan (20cm).
<span style="font-family: "verdana" , sans-serif;">Cook until the sides start to curl up, about 1-2 minutes over medium heat.
<span style="font-family: "verdana" , sans-serif;">Loosen the sides with fork and flip the pan quickly on a plate to get the wrapper off.
<span style="font-family: "verdana" , sans-serif;">Continue with the rest of the batter.
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">For assembling
<span style="font-family: "verdana" , sans-serif;">Place a tablespoon of filling into the middle of a wrapper.
<span style="font-family: "verdana" , sans-serif;">Roll the side of wrapper away from you, form a 5cm log.
<span style="font-family: "verdana" , sans-serif;">Fold both sides to the middle, ensuring no gaps.
<span style="font-family: "verdana" , sans-serif;">Roll the risoles up and brush the tip with egg white for sealing.
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">For crumbing
<span style="font-family: "verdana" , sans-serif;">Prepare two plates, egg white and crumbs each.
<span style="font-family: "verdana" , sans-serif;">Dip risoles into egg white. Coat it with crumbs.
<span style="font-family: "verdana" , sans-serif;">Dip the crumbed risoles back into egg white and coat it again with more crumbs.
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">For frying
<span style="font-family: "verdana" , sans-serif;">Heat cooking oil in a saucepan.
<span style="font-family: "verdana" , sans-serif;">Lower the rolls into hot oil, two or three at a time.

<span style="font-family: "verdana" , sans-serif;">Fry until golden brown, about 3 minutes.
<span style="font-family: "verdana" , sans-serif;">Ready to serve.
<span style="font-family: "verdana" , sans-serif;">Simple but cute. These Cute Croissants are pretty easy to make. Just halve the ham and cheese croissants, then plug in the fun-eyed food pick on each of them.
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">The fun-eyed food picks are my favourite bento tools as it gives extra cuteness to my bento.
<span style="font-family: "verdana" , sans-serif;">I saw an interesting Jell-O recipe at facebook by Cooking Panda and tried to make it. It only consists of two ingredients which are Jell-O and marshmallow. And it is pretty easy to make as well. The kids love it, so it is a win-win situation for us :)
<span style="font-family: "verdana" , sans-serif;">First day of term 2 in 2016. The boys already missed their bento and so did I. <span style="font-family: "verdana" , sans-serif;">Last night we had sushi time where I and my boys were making sushi together. Basically I prepared some ingredients for the sushi fillings, and the boys may choose which ingredients will go in their sushi.
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">The ingredients that I prepared were roast chicken, carrot, cucumber, smoked salmon, avocado, ham, soy sauce, Kewpie mayonese, and Japanese pickled ginger.

<span style="font-family: "verdana" , sans-serif;">The boys were having so much fun creating their sushi. And after dinner, there were some leftover for their lunch box next day.
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">The first sushi fillings option was chicken roast, carrot, cucumber, soy sauce and pickled ginger. The second one was smoked salmon, cucumber, carrot, avocado, with soy sauce and pickled ginger. And last but not least was roast chicken, ham, avocado, Kewpie mayo, pickled ginger and cucumber.

<span style="font-family: "verdana" , sans-serif;">Another holiday activity with my boys, this time we assembled a meal in the bento box to share together. I've shared the Okonomiyaki recipe in my last post. I made few extras at that time then I froze them (without the topping) and took them out whenever I needed.
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">So this time, I share another yummy recipe :
<span style="font-family: "verdana" , sans-serif;">

<span style="color: blue; font-family: "verdana" , sans-serif; font-size: large;">Chicken Karaage

<span style="font-family: "verdana" , sans-serif;">Ingredients:
<span style="font-family: "verdana" , sans-serif;">450 gr boneless and skinless chicken breasts/chicken thighs (cut into small pieces)
<span style="font-family: "verdana" , sans-serif;">3 cm fresh ginger (peeled and pounded with a mortar and pestle to extract 1 tablespoons of ginger juice)
<span style="font-family: "verdana" , sans-serif;">2 tablespoons soy sauce
<span style="font-family: "verdana" , sans-serif;">3 tablespoons sake
<span style="font-family: "verdana" , sans-serif;">1/8 teaspoon sesame oil (optional)
<span style="font-family: "verdana" , sans-serif;">Corn starch to coat the chicken
<span style="font-family: "verdana" , sans-serif;">Oil for deep frying
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">Method:
<span style="font-family: "verdana" , sans-serif;">1. Use paper towels to pat dry the chicken pieces and transfer to a bowl.
<span style="font-family: "verdana" , sans-serif;">2. Add in sake, ginger juice, soy sauce, sesame oil (optional) and marinate for 30 minutes.
<span style="font-family: "verdana" , sans-serif;">3. Transfer the chicken pieces out of the marinate and coat them evenly with corn starch. Shake off excess.
<span style="font-family: "verdana" , sans-serif;">4. <span style="font-family: "verdana" , sans-serif;">Deep-fry in oil for two times.
<span style="font-family: "verdana" , sans-serif;">5. Heat up a wok/pot of cooking oil until it is<span style="font-family: "verdana" , sans-serif;"> hot enough for frying.
<span style="font-family: "verdana" , sans-serif;">6. Drop the chicken pieces into the oil and quickly deep fry them until they float. 7. Transfer them out onto a plate and wait for a couple of minutes.
<span style="font-family: "verdana" , sans-serif;">8. Put the chicken back into the oil and deep-fry until golden brown and crunchy.
<span style="font-family: "verdana" , sans-serif;">9. Dish out to a plate or bowl lined with paper towels to absorb the excess oil. 10. Ready to serve

<span style="font-family: "verdana" , sans-serif;">I've heard about Okonomiyaki (Japanese Pancake) for quite some time and am really curious to have a taste. Today, I had a chance to make it.
<span style="font-family: "verdana" , sans-serif;">There are so many versions of Okonomiyaki, so I tried to adapt several recipes and adjusted it with the ingredients I had at home. It is quite yummy, I supposed :)
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">Here I share my recipe :
<span style="font-family: "verdana" , sans-serif;">

<span style="color: blue; font-family: "verdana" , sans-serif; font-size: large;">Okonomiyaki (Japanese Pancake)
<span style="font-family: "verdana" , sans-serif; font-size: x-small;">serves : 4
<span style="color: blue; font-family: "verdana" , sans-serif; font-size: large;">

<span style="font-family: "verdana" , sans-serif;">Ingredients :
<span style="font-family: "verdana" , sans-serif;">8 cups cabbage (about a whole large cabbage), finely diced
<span style="font-family: "verdana" , sans-serif;">1 cup squid (optional), chopped into small piece
<span style="font-family: "verdana" , sans-serif;">Oil
<span style="font-family: "verdana" , sans-serif;">100 gr pork minced
<span style="font-family: "verdana" , sans-serif;">1 small onion, chopped
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">Okonomiyaki Batter
<span style="font-family: "verdana" , sans-serif;">1 cup all-purpose flour
<span style="font-family: "verdana" , sans-serif;">1/4 tsp. salt
<span style="font-family: "verdana" , sans-serif;">1/4 tsp. sugar
<span style="font-family: "verdana" , sans-serif;">1/4 tsp. baking powder

<span style="font-family: "verdana" , sans-serif;">3/4 cup dashi (Japanese stock)
<span style="font-family: "verdana" , sans-serif;">4 eggs
<span style="font-family: "verdana" , sans-serif;">1/4 cup pickled red ginger, sliced
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">Toppings
<span style="font-family: "verdana" , sans-serif;">Okonomi sauce
<span style="font-family: "verdana" , sans-serif;">Japanese mayonnaise (Kewpie mayo)
<span style="font-family: "verdana" , sans-serif;">Katsuobushi (dried bonito flakes)
<span style="font-family: "verdana" , sans-serif;">Green onions, finely chopped
<span style="font-family: "verdana" , sans-serif;">Pickled red ginger (Kizami Beni Shoga) for garnish
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">Instructions:
<span style="font-family: "verdana" , sans-serif;">1. In a large bowl, combine flour, salt, sugar, and baking powder.
<span style="font-family: "verdana" , sans-serif;">2. Whisk dashi stock and flour mixture together in a bowl until smooth and set aside.
<span style="font-family: "verdana" , sans-serif;">3. <span style="font-family: "verdana" , sans-serif;">Meanwhile, remove the core of the cabbage and finely dice the cabbage (finer the better).
<span style="font-family: "verdana" , sans-serif;">4. <span style="font-family: "verdana" , sans-serif;">In the bowl, add eggs, Tenkasu, and Pickled Ginger, and mix well. Then add squid and mix again.
<span style="font-family: "verdana" , sans-serif;">5. <span style="font-family: "verdana" , sans-serif;">Stir in the cabbage.
<span style="font-family: "verdana" , sans-serif;">6. <span style="font-family: "verdana" , sans-serif;">In a non-stick frying pan heat oil on medium to medium high heat. Scoop one ladle of batter and place on the pan.
<span style="font-family: "verdana" , sans-serif;">7. <span style="font-family: "verdana" , sans-serif;">Do not flatten the mixture because it will easily break when you turn it over.
<span style="font-family: "verdana" , sans-serif;">8. <span style="font-family: "verdana" , sans-serif;">Place 2 tbs pork minced on top of Okonomiyaki and cook covered for 5 minutes.
<span style="font-family: "verdana" , sans-serif;">9. <span style="font-family: "verdana" , sans-serif;">When the bottom side is nicely browned, turn it over and cook covered for another 5 minutes.
<span style="font-family: "verdana" , sans-serif;">10. <span style="font-family: "verdana" , sans-serif;">Turn over one more time and cook uncovered for 2 minutes. Transfer to a plate.
<span style="font-family: "verdana" , sans-serif;">11. <span style="font-family: "verdana" , sans-serif;">Apply Okonomi Sauce and Japanese mayonnaise, and sprinkle katsuobushi. 12. You can also put green onions and pickled red ginger on top for garnish.
<span style="font-family: "verdana" , sans-serif;">13. Enjoy!

<span style="font-family: "verdana" , sans-serif;">During school holidays, the boys are always hungry. This afternoon, I tried to whip up some ingredients in the pantry and made these white chocolate, pistachios and oat cookies.
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">The original recipe is from Better Home and Garden. It is called white chocolate, walnut and oat biscuits. But I swapped the walnut with pistachios and it tasted delicious!
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">Here I share the recipe :
<span style="font-family: "verdana" , sans-serif;">Another Christmas-themed bento. My youngest son had a class party and we were assigned to bring a savoury dish to school.

<span style="font-family: "verdana" , sans-serif;">I found a very yummy recipe from Taste which is Prosciutto and Cheese Puffs and I thought it would be perfect for the party. Since I did not have prosciutto, I replaced it with bacon.

<span style="color: blue; font-family: "verdana" , sans-serif; font-size: large;">Prosciutto and Cheese Puffs
<span style="font-family: "verdana" , sans-serif;">adapted from Taste

<span style="font-family: "verdana" , sans-serif;">Ingredients :
<span style="font-family: "verdana" , sans-serif;"> 1 cup water
<span style="font-family: "verdana" , sans-serif;"> 1/4 teaspoon sea salt
<span style="font-family: "verdana" , sans-serif;"> 115g unsalted butter, cut into pieces
<span style="font-family: "verdana" , sans-serif;"> 1 cup plain flour
<span style="font-family: "verdana" , sans-serif;"> 4 large eggs
<span style="font-family: "verdana" , sans-serif;"> 1/2 cup (60g) finely chopped prosciutto (I replaced it with bacon)
<span style="font-family: "verdana" , sans-serif;"> 2/3 cup grated cheddar cheese
<span style="font-family: "verdana" , sans-serif;">

<span style="font-family: "verdana" , sans-serif;">Method :
<span style="font-family: "verdana" , sans-serif;">1. Preheat oven to 200°C (180°C fan). Line two large baking trays with baking paper.
<span style="font-family: "verdana" , sans-serif;">2. <span style="font-family: "verdana" , sans-serif;">In a medium saucepan over medium-high heat, combine the water, salt and butter, and bring to the boil. <span style="font-family: "verdana" , sans-serif;">Add the flour and stir vigorously with a wooden spoon until completely blended, about 1 minute. Continue to cook, stir constantly, until the mixture starts to pull away from the sides of the pan, about 2 minutes. Transfer the mixture to a large bowl.
<span style="font-family: "verdana" , sans-serif;">3. <span style="font-family: "verdana" , sans-serif;">Using an electric mixer, beat the dough for 1 minute, or until it cools slightly. Add the eggs one at a time, mix well before each addition. Stir in the bacon/prosciutto and cheese, and season with salt and pepper. The dough will be very tacky.
<span style="font-family: "verdana" , sans-serif;">4. <span style="font-family: "verdana" , sans-serif;">While the dough is warm, place it in a pastry bag fitted with a plain 1.5 cm tip, or place into a resealable freezer bag and snip one corner of the bag to form a 1.5 cm opening. Pipe mounds of dough, each about 3cm high x 3cm wide, onto prepared trays, leaving about 2.5 cm between each. Bake for 25-30 minutes, or until puffed and deep golden brown all over.
<span style="font-family: "verdana" , sans-serif;">5. <span style="font-family: "verdana" , sans-serif;">Transfer puffs to a platter and serve warm.
<span style="font-family: "verdana" , sans-serif;">My first Christmas post! Unlike few years before, this year I have a hectic schedule and haven't got any chance to create Christmas-themed bento lunches earlier. Apology for that :(
