This Ham, Corn and Vegetables Muffins are so perfect for lunch boxes. I used to make them in a batch, and then put it in the ziplock bag and freeze it. The previous night, I take the bag out and put in the fridge to thaw. And in the next morning I reheat it in the microwave for a minutes and it's ready to pack in the lunch box. Just make sure that all foods are cool enough before putting the lid on to avoid food poisoning. And be sure to pack a frozen ice block into the lunch box.
Ham, corn and vegetables Muffins
Ingredients
2½ cups Self Raising Flour
150g shaved leg ham, finely chopped
¾ cups milk
1 egg, lightly beaten
½ cup vegetable oil
⅔ cup grated tasty cheese
125g corn kernel
1 pcs leek - chopped
1 pcs medium carrot - grated
Salt and pepper, to season
Instructions
Preheat oven to 180C
Grease a 12 hole muffin tin
Place flour, corn, leek, carrot and ham into a bowl, stir to combine
Add the remaining ingredients, stir mixture until just combined.
Divide the mixture evenly between muffin holes.
Bake it in the oven for 20 minutes or until golden.
Allow it to cool for 5 minutes then remove it from muffin tin and cool it again on wire rack.
